Another favorite: Bhindi masala/okra
I found out that not many people like this vegetable. I love it. I can eat more than two rotis if i make this dish.
Ingredients
•Black peppercorns,crushed2 teaspoons
•Tender ladyfingers 350 grams
•Oil 2 tablespoons
•Green chillies,slit 2-3
•Sea salt to taste
•Sambhar onions,halved 1 cup
•Tamarind pulp 2 teaspoons
•Coconut oil 1 tablespoon
Method
Slit the ladyfingers into four vertically and then halve each of them. Heat oil in a pan, add green chillies and sauté for a minute. Add ladyfingers and sea salt and stir. Add sambhar onions, tamarind pulp and crushed peppercorns and toss well. Cover and cook on medium heat till the ladyfingers are done. Drizzle coconut oil and toss. Serve hot.
Chef's Tip : do not wash okra. only wipe with a damp paper towel. Otherwise you get the okra all slimy (yuck)
