I love spinach especially the red ones! my aunt in Vadakara makes the best! unfortunately the red spinach is not available here in the US. But there is a will if there is a way. I got some red spinach seeds from India and grew them here! vola!!! i had a nice bunch of spinach growing in my back yard thanks to my mother in law!. she took care of the watering etc. Then it was ready to cut it off for some cooking. I was so excited to make it as soon as i got home that evening. But my excitement died down soon when i found out that mother in law had added one green spinach that her friend from Sri lanka had given her. ( like i said i love spinach but not this green kind) cause it had a strong fertilizer taste and smell to it. I had tried it once and had decided never again. But i did not wanted to give up such nice cut spinach which my mother in law had kept ready for me to make. I decided to tweek some of my own seasonings to cover that taste. here is the recipe to try.
Ingredients for Cheera Curry - Malabar Style Recipe
Green/Red spinach(Cheera) - 1 bunch
Onion - 1 no
(cut into small pieces)
Green chillies - 3 nos
(sliced)
Turmeric powder - 1/2 tsp
Coconut oil - 2 tbsp
Salt - As reqd
For grinding:-
Small onions(Kunjulli) - 4 nos
Fennel seeds (2tbsp)
Grated coconut - 1 cup
Cumin seeds(Jeerakam) - 1/2 tsp
Coriander seeds - 1/2 tsp
For seasoning:-
Coconut oil - 1 tbsp
Mustard seeds - 1 tsp
Small onions(Kunjulli) - 4 nos
Curry leaves - A few
Preparation Method of Cheera Curry - Malabar Style Recipe
1)Wash and clean the spinach well.
2)Separate the leaves from the stem and cut them to small sections.
3)Heat 2 tbsp of oil in a pan or a kadai.
4)Saute onion pieces, till they become soft.
5)Add the spinach or cheera along with the green chillies.
6)Add turmeric powder and salt and mix well.
7)Pour a little water.
8)Cover and cook for 2 mins with some coconut milk in the end!
Everybody enjoyed it! that is my husband and my mother in law. When she asked what is that distinct and tasty ingredient you have added? then i had to tell her what i had done to cover the 'green spinach' taste. She laughed and said smart thinking. LOL ........score!!
